INGREDIENTS
Any cooked beans of your choice (I used kidney bean and chickpea)
Mixed coloured bell peppers (diced)
Canned sweetcorn (rinsed)
Any green leafy vegetables of your choice (I used kale)
Cucumber (diced)
Olive oil and lemon juice (dressing)

DIRECTION
1. Combine all the above ingredients together in a salad bowl
2. Drizzle with a bit of olive oil and squeeze in fresh lemon
3. Mix well together and serve as you desire
